Oh wait that was in the title.

Finally, a book for the adults. Anthony Bourdain recently passed away, but his compelling book from 2000 is full of the underside of the cooking industry. Readers will be let in on how restaurants work and learn about when to get the freshest food. (For example: avoid fish on Mondays as it is likely made on the weekend or Friday. Also avoiding well-done beef, since the meat is more likely to be from a less-than-best grade.
